Ingredients:
- 1 tbsp olive oil
- 1/2 cup (50g) raw mixed vegetables cut into small pieces (broccoli, carrots, pepper, zucchini, tomato, onion, etc.)
- 1/4 teaspoon turmeric powder
- 1 cup (170g) quinoa (rinse in cold water)
- 2 cups (500mL) chicken or vegetable stock.
Heat the olive oil over medium heat. Add the chopped vegetables and sauté them, stirring constantly until tender, 3-4 minutes. Add the quinoa and stir for 1-2 minutes. Add the broth and wait for it to come to a boil. Lower the temperature, cover the pan with the lid and simmer for 10-12 minutes until all the liquid is absorbed.
